The incredible recipe to mouth watering, gooey chocolate brownies by the amazing Jess Muirden
Ingredients
• 1/2 tsp instant coffee
• 6 tablespoons boiling water
• 2 tablespoons flaxseed meal
• 1 cup + 1 tablespoon white sugar
• 1/3 cup vegan butter
• 1 tsp vanilla extract
• 180g vegan chocolate - I used @lindt_australia
• 3/4 cup plain white flour
• 1/4 cup cacao powder
• 1 tsp bi carb soda
• 1 tsp salt
• 1/2 tsp cinnamon
Instructions
Stage 1
Mix coffee, boiled water and flaxseed meal in a bowl and set aside
Stage 2
Line a brownie tin with baking paper and pre heat oven to 180 Celsius
Stage 3
Melt the butter (in the microwave for approx. 30-45 seconds) and add sugar into a big bowl, pour the melted butter over it, and whisk together, before adding vanilla extract and flax-egg mix.
Stage 4
Separate the chocolate into 100g and 80g - melt 100g in 30-45 second intervals and set the 80g aside, add the melted chocolate to the mixture
Stage 5
Sift in the flour and cocoa powder and then add the bi carb soda, cinnamon and salt. Mix everything until just combined and then stir in the remaining chocolate.
Stage 6
Pour the mixture into the baking tin, smooth with a spatula and cook for 25-30 minutes. Finally, let it cool before cutting and enjoy with an iced coffee!
